Ingredients/Components

  • cold water - 8 c
  • cloves garlic, minced - 4 item
  • olive oil - 1/4 c
  • black pepper - 1/4 tsp
  • tomato, chopped - 1 item
  • fresh lime juice
  • kosher salt - 1 Tbsp
  • minced white onion - 2/3 c
  • chopped fresh cilantro - 2 Tbsp
  • slices bacon, finely chopped - 2 item
  • dried pinto beans, soaked according to pkg - 1 lb
  • dried ancho chiles, stems removed, seeded and chopped - 2 item
  • Guacamole:2 ripe avocados, cut in small cubes
  • serrano chiles, seeded and minced - 2 item
  • corn tortilla chips - 4 doz
  • Cheddar, shredded - 1/2 lb
  • sliced pickled jalapeos - 1/2 c

How to make refried bean nachos:

Guacamole:2 ripe avocados, cut in small cubes3/4 c. minced white onion2 serrano chiles, seeded and minced2 1/2 Tbsp. fresh lime juice2 Tbsp. chopped fresh cilantro2 tsp. olive oil1 tsp. kosher salt1/4 tsp. black pepper1 tomato, chopped4 doz. corn tortilla chips1/2 lb. Cheddar, shredded1/2 c. sliced pickled jalapeos BEANS: In Dutch oven, bring beans, chiles and the water to a boil. Simmer, partially covered, 1 1/2 hours until very tender. Drain beans, reserving 1 cup liquid. In processor, in batches, puree beans and reserved liquid (can be done up to 3 days ahead; refrigerate).

In a large skillet, heat oil. Add bacon; cook until crisp. Add onion and garlic; cook until golden brown, 4 minutes. Add beans; cook, stirring, until oil is absorbed, mixture thickened and creamy, 10 to 12 minutes. Add salt. Remove 2 3/4 cups. Refrigerate or freeze for other use. Keep beans in pot warm.

GUACAMOLE: In bowl, combine avocado, onion, chiles, juice, cilantro, oil, salt and pepper. With spoon, blend ingredients, lightly mashing avocado, leaving small chunks. Stir in tomato (can be made day ahead; refrigerate).

TO SERVE: Preheat broiler. Arrange chips on 2 large baking sheets. Spoon 1 tablespoon beans on each chip. Sprinkle with cheese. Place jalapeo on each. Broil 1 pan at a time, until cheese melts. Transfer to platter. Top each with guacamole. Serve.
