Ingredients/Components

  • sugar
  • eggs - 2 item
  • milk
  • butter - 1/2 c
  • vanilla flavoring - 1 Tbsp
  • water - 1/4 c
  • buttermilk - 1 c
  • Add eggs and beat well
  • cocoa, mixed with 2 oz - 2 Tbsp
  • plain flour, sifted and measured
  • salt, soda and vinegar - 1 tsp

How to make red velvet cake:

Cream butter and sugar until fluffy. Add eggs and beat well. Make paste of cocoa and coloring. Add to mixture.

Sift flour and salt. Add alternately with buttermilk, vanilla and water. Add soda and blend well. Add vinegar last, but do not beat. Just stir it in gently. Bake in 2 greased, lightly floured cake pans for 25 to 30 minutes at 350°. Cool. Split layers and ice generously with fluffy butter frosting.Fluffy Butter Frosting:6 Tbsp. flour1 1/2 c. sugar1 1/2 c. butter1 1/2 c. milk1 1/2 tsp. vanilla flavoring Mix and cook the flour and milk until thick, stirring constantly. Continue to stir until completely cool. Cream the butter (3/4 pound and should be real butter at room temperature), sugar and vanilla until all of the mixture becomes light and fluffy. Add to cooled sauce and beat for 10 minutes. Frost cake layers generously.

This frosting is very rich and soft and buttery. Cake must be refrigerated when using the fluffy butter icing.
