Ingredients/Components
- salt - 1 Tbsp
- water - 2 qt
- Worcestershire sauce - 1 Tbsp
- chopped onion - 3 c
- chopped green pepper - 1 c
- oregano - 1/4 tsp
- chopped parsley - 1 c
- black pepper - 1 tsp
- minced garlic - 4 tsp
- bay leaves - 2 item
- red pepper - 3/4 tsp
- bunch green onions, chopped - 1 item
- dried red beans - 1 lb
- ham hock - 1/2 lb
- to 4 dashes Tabasco sauce - 3 item
How to make red beans and rice:
Cover beans and soak 2 to 3 hours. Drain and cook beans in 2 quarts of water for 45 minutes. Add remaining ingredients and cook slowly for 2 to 3 hours. Stir occasionally. Put in Chaurice sausage or any smoked sausage of your choice the last hour. Cut into bite size chunks. Serve over rice.Recipe categories: Pork, Beans, Rice.
