Ingredients/Components

  • salt - 1 Tbsp
  • water - 2 qt
  • Worcestershire sauce - 1 Tbsp
  • chopped onion - 3 c
  • chopped green pepper - 1 c
  • oregano - 1/4 tsp
  • chopped parsley - 1 c
  • black pepper - 1 tsp
  • minced garlic - 4 tsp
  • bay leaves - 2 item
  • red pepper - 3/4 tsp
  • bunch green onions, chopped - 1 item
  • dried red beans - 1 lb
  • ham hock - 1/2 lb
  • to 4 dashes Tabasco sauce - 3 item

How to make red beans and rice:

Cover beans and soak 2 to 3 hours. Drain and cook beans in 2 quarts of water for 45 minutes. Add remaining ingredients and cook slowly for 2 to 3 hours. Stir occasionally. Put in Chaurice sausage or any smoked sausage of your choice the last hour. Cut into bite size chunks. Serve over rice.
