Red beans and rice
Ingredients/Components
- red kidney beans - 1 lb
- ham hock, split, or ham bone - 1 item
- salt pork - 3/4 lb
- can tomatoes - 1 item
- large onion, chopped - 1 item
- celery, chopped - 3/4 c
- parsley - 1 tsp
- smoked sausage links - 1 lb
How to make red beans and rice:
Wash and sort beans. Place all ingredients in a large pot. Add water to cover. Simmer for 12 hours, or until beans are tender. Stir beans about once each hour and add water if necessary while simmering. Near end of cooking period, a pound a smoked sausage links may be added. Serve over rice. Serves 8 to 10.
