  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 2 item
  • butter or margarine - 1 c
  • flour - 3 c
  • baking soda - 2 tsp
  • chopped walnuts - 1/2 c
  • raisins - 1/2 c
  • ground cloves - 1 tsp
  • medium apples, divided - 3 item
  • very strong, cold coffee - 1 c

How to make raw apple cake:

Preheat oven to 350°. Grease 13 x 9-inch baking pan. In small bowl, combine flour, cinnamon, baking soda and cloves. Pare, core and chop 2 apples.

In mixing bowl with electric mixer at medium speed, cream butter and sugar until light and fluffy. Add eggs; beat until well blended. Beat flour mixture alternately with coffee into creamed mixture. Stir chopped apples into batter with walnuts and raisins. Pour batter into pan. Bake 55 to 60 minutes or until toothpick inserted in center of cake comes out clean. Cool cake in pan on wire rack.

Just before serving, chop remaining apple. Cut cake into 12 pieces. Top with sour cream and apple chunks. Makes 12 servings.
