Ingredients/Components
- eggs - 4 item
- vanilla - 1 tsp
- chopped pecans - 1 c
- milk - 2 Tbsp
- water
- coconut - 2 c
- oil - 1/4 c
- powdered sugar - 1 lb
- 2 layer size yellow cake mix - 1 pkg
- 4 serving size vanilla instant pudding and pie filling - 1 pkg
- Beat at medium speed by electric mixer for 4 minutes
How to make rave review coconut cake:
Blend cake mix, pudding mix, water, eggs and oil in a large mixer bowl. Beat at medium speed by electric mixer for 4 minutes. Stir in coconut and pecans. Pour into 3 greased and floured 9-inch layer pans. Bake at 350° for 35 minutes. Cool in pans for 15 minutes. Remove and cool on rack. Fill and frost with Coconut Cream Cheese Frosting.Coconut Cream Cheese Frosting:8 oz. cream cheese2 Tbsp. milk1 lb. powdered sugar1 tsp. vanilla Beat until creamy and spread on cake.
