Raspberry streusel muffins
Ingredients/Components
- sugar - 1/2 c
- chopped pecans
- milk - 1/2 c
- brown sugar - 1/4 c
- baking powder - 2 tsp
- melted butter - 1/2 c
- all-purpose flour
- egg, beaten - 1 item
- fresh or frozen whole unsweetened raspberries - 1 c
How to make raspberry streusel muffins:
Streusel Topping:1/4 c. chopped pecans1/4 c. brown sugar1/4 c. all-purpose flour2 Tbsp. melted butter In large bowl, combine flour, sugar and baking powder. In small bowl, blend milk, butter and egg. Stir milk mixture into flour mixture just until moistened. Spoon 1 tablespoon batter into each of 12 greased muffin cups. Divide half of the berries among cups. Top with remaining batter, then remaining raspberries.For topping, combine ingredients and sprinkle on top of muffins. Bake at 375° for 20 to 25 minutes or until muffins test done. Cool slightly and invert tin to remove muffins.
