Prepare turkey for roasting (defrosting if frozen). Stuff if desired and truss. Or place a piece of aluminum foil in opening to cover dressing. (Stuffing may be placed under turkey breast.) Melt 4 tablespoons butter and brush on turkey or turkey breast. Salt and pepper all sides. (If roasting turkey breast, place on top of mound of dressing, covering mound.) Place turkey or turkey breast on large piece of aluminum foil that has been placed in pan with at least 1-inch or 2-inch lip. Fold sides of aluminum foil up over turkey, allowing about 3-inches. Fold several times and seal. Fold ends of aluminum foil and seal. Do not open foil until cooking time has ended. Turkey is usually brown and juices are in bottom of pan for making gravy.
