Ingredients/Components
- cinnamon - 1/4 tsp
- vanilla extract - 1/2 tsp
- salt - 1/2 tsp
- brown sugar - 1/2 c
- butter - 1/4 c
- baking powder - 1/2 tsp
- baking soda - 1 tsp
- boiling water - 1 c
- egg - 1 item
- all-purpose flour
- pumpkin pie spice - 1 tsp
- raisins - 1 c
- butter, melted - 2 Tbsp
- white sugar - 1/2 c
- chopped pecans or walnuts - 1/2 c
- ice cream or whipped topping - 1 item
- butterscotch flavor - 1 tsp
How to make raisin pudding cake:
Combine raisins with 1 cup boiling water; set aside and cool to room temperature. In large bowl mix together white sugar, brown sugar, egg and 1/2 cup butter. In separate container, combine flour, soda, baking powder, salt, pumpkin pie spice and cinnamon; add to sugar mixture. Stir in nuts and raisins and water mixture. Pour into ungreased 9 x 13-inch pan. Combine remaining ingredients except ice cream or topping; pour over raisin cake mixture. Bake at 375° for 40 minutes. Serve warm with ice cream or whipped topping.
