Raisin pie



  • sugar - 1 c
  • butter or margarine - 2 Tbsp
  • salt - 1/4 tsp
  • cornstarch - 4 Tbsp
  • hot water - 2 c
  • lemon juice - 2 Tbsp
  • seedless raisins - 2 c
  • lemon or orange extract - 1 tsp

How to make raisin pie:

Mix sugar and cornstarch; combine with water, raisins and salt; cook until thickened. Add butter, lemon juice and extract. Cool slightly and pour into pastry lined pie pan and top with pastry, plain or latticed. Bake at 450° for 10 minutes, reduce to 375° and continue baking for 25 to 30 minutes. Makes a 9-inch pie.
