Raisin bran muffins
Ingredients/Components
- solid vegetable shortening, melted and cooled - 1 c
- sugar - 1 c
- firmly packed brown sugar - 1 c
- eggs, beaten to blend - 4 item
- buttermilk - 4 c
- all-purpose flour - 5 c
- box Raisin Bran cereal - 1 oz
- raisins - 1/2 c
- baking soda - 5 tsp
- salt - 2 tsp
How to make raisin bran muffins:
Preheat oven to 400°. Grease 12-cup muffin tin. Mix shortening with sugars in large bowl. Stir in eggs. Gradually add buttermilk. Add remaining ingredients and mix just until blended. Fill each tin 3/4 full. Bake about 20 minutes. Chill remaining batter in airtight container. This "miracle" batter will keep in the refrigerator for several weeks.
