  • salt - 1/4 tsp
  • butter or margarine, melted - 1/4 c
  • pepper - 1/4 tsp
  • Dijon mustard - 2 Tbsp
  • soft bread crumbs - 1 c
  • minced fresh parsley - 1/4 c
  • garlic clove, minced - 1 item
  • each, trimmed - 4 racks

How to make rack of lamb:

Preheat oven to 350 degrees. Place lamb on a rack in a greased large baking pan, brush with mustard. In a small bowl, combine the bread crumbs, parsley, salt and pepper. Press onto the meat. Combine butter and garlic, drizzle over meat. Bake for 30-40 minutes or until meat reaches desired doneness (160 degrees for medium-well, 170 degrees for well-done). Yield: 8 servings.
