Ingredients/Components
- salt - 1/4 tsp
- butter or margarine, melted
- pepper - 1/4 tsp
- Dijon mustard - 2 Tbsp
- soft bread crumbs - 1 c
- minced fresh parsley - 1/4 c
- garlic clove, minced - 1 item
- each trimmed - 4 racks
How to make rack of lamb:
Preheat oven to 350°. Place lamb on a rack in a greased large roasting pan; brush with mustard. In a small bowl, combine the bread crumbs, parsley, salt and pepper. Press onto the meat. Combine butter and garlic; drizzle over the meat. Bake, uncovered for 35 to 40 minutes or until meat reach desired doneness. Yield: 8 servings.Recipe categories: Main dish, Meat, Lamb/sheep.
