Ingredients/Components
- butter or margarine - 1/4 c
- nutmeg - 1/8 tsp
- brown sugar, firmly packed - 1 Tbsp
- peeled, cubed 1-inch butternut squash
- peeled, quartered and sliced 1/2-inch yellow squash
- unpeeled, sliced 1/8-inch zucchini
How to make quick skillet squash medley:
In a 10-inch skillet, melt butter. Stir in remaining ingredients, except zucchini. Cook over medium heat, stirring occasionally, 5 minutes. Stir in zucchini. Continue cooking until squash are crispy-tender (4 to 5 minutes). Makes 6 servings.Recipe categories: Squash, Side dish, Vegetables.
