Quick beet borscht



  • sugar - 1 Tsp
  • sour cream - 1 (small
  • lemon juice - 1 tsp
  • onion, minced - 2 Tbsp
  • cabbage, shredded - 1 c
  • condensed beef broth or one bouillon - 1 (10
  • can shoe string beets - 1 lb

How to make quick beet borscht:

Heat beef broth, if using a bouillon cube add 10 1/2-ounces water, beets with liquid, cabbage, sugar, and onion to boiling. Reduce heat; simmer gently five minutes. Stir in lemon juice. Chill thoroughly. Top each serving with a spoon of sour cream. Serve with Ritz crackers. This borscht can also be served hot.
