Quail baked in wine
Ingredients/Components
- salt - 1/2 tsp
- pepper - 1/4 tsp
- cloves garlic, minced - 2 item
- bay leaf - 1/2 item
- fat - 1/2 c
- peppercorns - 1 tsp
- white wine - 2 c
- dash of cayenne pepper - 1 item
- whole cloves - 2 item
- minced chives - 1 tsp
- cream or evaporated milk - 2 c
- small onions, minced - 2 item
- quail, cleaned - 6 item
How to make quail baked in wine:
Melt fat; add onions, cloves, peppercorns, garlic and bay leaf. Cook several minutes. Add quail and brown on all sides. Add wine, salt, pepper, cayenne and chives. Simmer until tender, about 30 minutes. Remove quail to hot serving dish. Strain sauce, add cream and heat to boiling point. Pour over quail. Serves 6.Recipe categories: Main dish, Wild game, Quail.
