Ingredients/Components

  • salt - 1/2 tsp
  • pepper - 1/4 tsp
  • bay leaf - 1/2 item
  • fat - 1/2 c
  • peppercorns - 1 tsp
  • white wine - 2 c
  • whole cloves - 2 item
  • minced chives - 1 tsp
  • cream or evaporated milk - 2 c
  • few grains cayenne - 1 item
  • small onions, minced - 2 item
  • cloves garlic, cut fine - 2 item
  • quail, cleaned and trussed - 6 item

How to make quail baked in wine:

Melt fat, add onions, cloves, peppercorns, garlic and bay leaf; cook for several minutes. Add quail and brown on all sides. Add wine, salt, pepper, cayenne and chives and simmer until tender, about 30 minutes. Remove quail to hot serving dish. Strain sauce, add cream and heat to boiling point. Pour over quail. Allow 1 quail for each serving.
