  • yellow cake mix - 1 pkg
  • 1/2 sticks oleo - 1 item
  • coconut - 1 c
  • nuts - 1/2 c
  • Cool Whip - 1 item
  • Filling:3 large eggs
  • large can pumpkin - 1 item
  • sugar
  • cinnamon - 2 tsp
  • nutmeg - 1 tsp
  • ginger - 1/2 tsp
  • can evaporated milk - 1 item

How to make pumpkin upside-down cake:

Filling:3 large eggs1 large can pumpkin1 1/2 c. sugar2 tsp. cinnamon1 tsp. nutmeg1/2 tsp. ginger1 can evaporated milk Mix filling ingredients and spread in 9 x 13-inch pan. Sprinkle cake mix over mixture. Melt oleo and spread over cake mix. Bake 30 minutes at 350°. Add nuts and coconut. Bake another 30 minutes until brown. Cool. Top with Cool Whip.
