Ingredients/Components
- yellow cake mix - 1 pkg
- 1/2 sticks oleo - 1 item
- coconut - 1 c
- nuts - 1/2 c
- Cool Whip - 1 item
- Filling:3 large eggs
- large can pumpkin - 1 item
- sugar
- cinnamon - 2 tsp
- nutmeg - 1 tsp
- ginger - 1/2 tsp
- can evaporated milk - 1 item
How to make pumpkin upside-down cake:
Filling:3 large eggs1 large can pumpkin1 1/2 c. sugar2 tsp. cinnamon1 tsp. nutmeg1/2 tsp. ginger1 can evaporated milk Mix filling ingredients and spread in 9 x 13-inch pan. Sprinkle cake mix over mixture. Melt oleo and spread over cake mix. Bake 30 minutes at 350°. Add nuts and coconut. Bake another 30 minutes until brown. Cool.
