Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 4 item
- vanilla extract - 1 tsp
- salt - 1/2 tsp
- flour - 2 c
- confectioners sugar
- baking powder - 2 tsp
- baking soda - 1 tsp
- margarine - 1/4 2
- orange juice - 1 tsp
- can plain pumpkin - 1 oz
- corn oil * - 3/4 c
- Beat for 1 minute at medium speed and spoon into a greased 15 x 10 x 1-inch jelly roll pan and bake at 350° for 20 to 25 minutes depending on your oven
How to make pumpkin squares:
*Corn oil is very important; do not substitute!Combine first 5 ingredients, then add oil, pumpkin and eggs. Beat for 1 minute at medium speed and spoon into a greased 15 x 10 x 1-inch jelly roll pan and bake at 350° for 20 to 25 minutes (depending on your oven). Cool completely and frost with Cream Cheese Frosting.Cream Cheese Frosting:1 (3 oz.) cream cheese, softened1/4 plus 2 tsp. margarine1 tsp. orange juice1 tsp. vanilla extract1 3/4 c. confectioners sugar Beat cream cheese and margarine until light and fluffy. Add orange juice and vanilla and gradually add confectioners sugar until well blended. Spread on cooled squares. Makes about 5 dozen. Store in refrigerator.
