Ingredients/Components
- yellow onion, finely chopped - 1 item
- butter - 2 Tbsp
- flour - 2 Tbsp
- can pumpkin - 1 lb
- chicken broth - 5 c
- white vermouth optional - 1/4 c
- salt - 1 tsp
- ginger - 1/2 tsp
- nutmeg - 1/4 tsp
- egg yolks - 2 item
- whipping cream - 1 c
How to make pumpkin soup:
Saute onion in butter for 3 minutes, until softened. Stir in flour. Add pumpkin, mashing it into a puree. Add chicken broth, vermouth and salt. Cover and simmer 15 minutes. Add ginger and nutmeg.
