  • flour - 3/4 c
  • butter - 4 Tbsp
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • powdered sugar - 1 c
  • ginger - 1 tsp
  • canned pumpkin - 2/3 c

How to make pumpkin roll cake:

Filling:1 (8 oz.) pkg. soft cream cheese4 Tbsp. butter1 c. powdered sugar1 tsp. vanilla In a large bowl, combine eggs and sugar, beating well. Add pumpkin, mixing until blended. In a separate bowl, combine flour, baking powder, spices and salt. Add to egg mixture. Spread mixture into a greased and waxed paper-lined jelly roll pan. Bake at 375° for 15 minutes. Remove from pan. Place cake on a towel that has been sprinkled with powdered sugar. Roll up cake and let cool. Unroll cake and evenly spread filling over cake. Roll up cake. Cover with plastic wrap and refrigerate until ready to serve.

Filling: Beat the cream cheese and butter. Stir in powdered sugar and vanilla until smooth.
