Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 3/4 tsp
- salt
- flour - 3/4 c
- brown sugar - 1 c
- baking soda - 1 tsp
- powdered sugar - 1 c
- molasses - 1/4 c
- canned pumpkin - 2/3 c
- margarine - 1/2 c
- oatmeal - 3/4 c
- cream cheese, softened - 8 oz
- soft margarine
- lemon or orange juice - 1 tsp
- chopped nuts walnuts or pecans; optional - 1 c
- chocolate chips may substitute butterscotch chips or M&M candies; optional - 1 c
How to make pumpkin roll:
Filling:2 Tbsp. soft margarine8 oz. cream cheese, softened3/4 tsp. vanilla1 c. powdered sugar1/2 c. margarine1/2 c. butter flavored Crisco (don't substitute)1 c. sugar1/4 c. molasses1 c. brown sugar4 eggs1 Tbsp. vanilla1 tsp. lemon or orange juice3 c. flour2 tsp. baking soda1 1/2 tsp. salt1 tsp. cinnamon3/4 c. oatmeal1 c. chocolate chips (may substitute butterscotch chips or M&M candies; optional)1 c. chopped nuts (walnuts or pecans; optional)1 c. raisins (optional)65 Ritz crackers1 1/4 c. margarine2 pkg. coconut creme instant pudding (4 oz. boxes)1 1/2 c. skim milk1/2 gal. vanilla ice cream or vanilla frozen yogurt, softened1 (8 oz.) La Creme or Cool Whip1 c. coconut flakes, toasted2 1/2 c. sugar3 eggs1 c. margarine or butter1 c. buttermilk2 tsp. baking powder2 tsp. baking soda5 c. flour (may be a little more if batter looks too thin)2 tsp. vanilla nuts, sprinkles, etc. (optional) Mix all ingredients together well except sprinkles . Drop by heaping tablespoonfuls onto greased baking sheet. Bake at 375° for 12 minutes. Makes 4 1/2 dozen.Add sprinkles, etc., if desired.
