Pumpkin roll
Ingredients/Components
- sugar - 1 c
- cream cheese - 8 oz
- eggs - 3 item
- vanilla - 3/4 tsp
- salt - 1/2 tsp
- chopped nuts - 1 c
- confectioners sugar
- baking powder - 1 tsp
- pumpkin - 2/3 c
- all-purpose flour - 3/4 c
- margarine - 6 tsp
- lemon juice - 1 tsp
- cinnamon * - 2 tsp
- ginger * - 1 tsp
- nutmeg * - 1/2 tsp
How to make pumpkin roll:
Icing:1 1/2 c. confectioners sugar8 oz. cream cheese6 tsp. margarine3/4 tsp. vanilla *Or use 3 1/2 teaspoons pumpkin pie spice.Beat eggs on high for 5 minutes, gradually adding sugar during 5 minutes. Add all other ingredients, except pumpkin and nuts. Fold in pumpkin.
Grease 10 x 15-inch pan with oil. Cut a piece of wax paper and put in pan. Turn over wax paper so oil is on both sides. Pour batter on wax paper and sprinkle with nuts. Bake at 375° for 15 minutes. (Remove wax paper before rolling up.)
Remove cake from pan on a clean dish towel or paper towel sprinkled with confectioners sugar. Let cool in rolled up position. Unroll and spread with icing. Roll back up, cool and slice frozen.
