  • sugar - 1 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • pkg - 3 oz
  • salt - 1/2 tsp
  • flour - 3/4 c
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • pumpkin - 3/4 c
  • powdered sugar - 1 c
  • ginger - 1 tsp
  • margarine - 4 tsp
  • lemon juice - 1 tsp
  • finely chopped walnuts or pecans - 1 c

How to make pumpkin roll:

Beat eggs at high speed for 5 minutes; gradually beat in sugar. Stir in pumpkin and lemon juice. In a separate bowl, stir together flour, baking powder, cinnamon, ginger, nutmeg and salt. Gradually add pumpkin mixture to the flour mixture.

Spread in a greased and floured pan (15 x 10 x 1-inch). Top with nuts. Bake at 375° for 15 minutes.

Turn out on a towel sprinkled with powdered sugar. Starting at narrow end of towel, roll towel and cake together. Cool and unroll. Let cake cool 20 minutes.

Beat powdered sugar, cream cheese, margarine and vanilla until smooth and spread over cake. Roll up jelly roll fashion. Chill. Keep refrigerated and then slice.
