  • sugar - 1 c
  • cinnamon - 1 tsp
  • cream cheese - 8 oz
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • flour - 3/4 c
  • butter - 4 Tbsp
  • baking soda - 1 tsp
  • 10x sugar
  • cooked or canned pumpkin - 2/3 c

How to make pumpkin roll:

Filling:1 c. 10x sugar8 oz. cream cheese1/2 tsp. vanilla4 Tbsp. butter Beat eggs and sugar. Stir in pumpkin. Stir together flour, baking soda and cinnamon. Mix in pumpkin mixture. Grease and flour a 16 x 11 x 1-inch sheet pan. Pour into pan. Bake at 375° for 10 to 12 minutes.

Turn out onto a towel sprinkled with 10x sugar. Roll up towel and cake together. Cool. Unroll cake. Beat filling until smooth; spread cake with filling. Re-roll just the cake. Wrap in foil and place in refrigerator.
