Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 1 tsp
- pkg - 1 oz
- salt - 1/2 tsp
- flour - 3/4 c
- butter - 4 Tbsp
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- powdered sugar
- ginger - 1 tsp
- nuts optional - 1 item
- lemon juice - 1 tsp
How to make pumpkin roll:
Icing:1 c. powdered sugar1 (8 oz.) pkg. cream cheese4 Tbsp. butter1 tsp. vanilla Beat eggs at high speed for 5 minutes. Gradually add sugar. Stir in pumpkin and lemon juice. Fold together flour, cinnamon, ginger, nutmeg, salt and baking powder. Pour into a pan (cookie sheet) lined with waxed paper. (Spray wax paper with cooking spray for easy removing.) Top with nuts (as many or as few as you like, up to 1 cup). Bake at 375° for 15 minutes.Turn onto a moist towel, sprinkle with powdered sugar and roll up like a jelly roll. Cool completely. Then unroll and fill with icing.
