  • pumpkin - 2 c
  • flour - 3/4 c
  • baking powder - 1 tsp
  • nutmeg - 1/2 tsp
  • chopped nuts - 1 c
  • sugar - 1 c
  • lemon juice - 1 tsp
  • cinnamon - 2 tsp
  • ginger - 1 tsp
  • salt - 1/2 tsp
  • Gradually beat in sugar
  • butter - 4 Tbsp
  • cream cheese - 6 oz
  • vanilla - 1/2 tsp

How to make pumpkin roll:

Beat eggs on high speed for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. Fold in dry ingredients. Line jelly roll pan with waxed paper. Grease and flour paper. Spread batter in pan. Top with nuts. Bake at 375° for 15 minutes. Sift powdered sugar over tea towel. Invert baked cake onto towel immediately and roll up, starting from narrow end. Cool. Unroll and spread with filling. Roll and chill.Filling:1 c. powdered sugar4 Tbsp. butter6 oz. cream cheese1/2 tsp. vanilla Beat together until smooth.
