Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- cream cheese - 6 oz
- eggs - 3 item
- vanilla - 1/2 tsp
- butter or margarine - 4 tsp
- salt - 1 tsp
- flour - 3/4 c
- nutmeg - 1/2 tsp
- confectioners sugar
- baking powder - 1 tsp
- pumpkin - 2/3 c
- ginger - 1 tsp
- nuts, chopped - 1 c
- lemon juice - 1 tsp
How to make pumpkin roll:
Filling:1 c. confectioners sugar6 oz. cream cheese4 tsp. butter or margarine1/2 tsp. vanilla Beat 3 eggs on high for 5 minutes. Beat in 1 cup sugar. Stir in 2/3 cup pumpkin and lemon juice. Stir together flour, baking powder, cinnamon, ginger, nutmeg and salt. Fold dry ingredients into pumpkin mixture. Grease cookie sheet and line with waxed paper. Spread mixture on paper. Sprinkle 1 cup pecans or nuts of your choice on top. Bake in a 375° oven for 15 minutes. Turn out on a dish towel. Sprinkle with confectioners sugar. Roll up in the towel while hot like a jelly roll. Set aside to cool.Beat filling ingredients until smooth. Unroll pumpkin roll when cool and spread on filling. Roll up; wrap in foil and refrigerate. Serves 20.
This dessert looks so pretty and is delicious. Serve in small slices. This is a great fund raiser. They are really easy to make and freeze well.
