  • sugar - 1 c
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • pkg - 1 oz
  • salt - 1/2 tsp
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • melted butter - 4 Tbsp
  • pumpkin - 3/4 c
  • powdered sugar
  • ginger - 1 tsp
  • plain flour - 3/4 c
  • lemon juice - 1 tsp

How to make pumpkin roll:

Filling:1 c. powdered sugar1 (8 oz.) pkg. cream cheese4 Tbsp. melted butter1/2 tsp. vanilla Beat eggs for 5 minutes and then add sugar slowly. Put pumpkin and lemon juice in while you are still beating. Mix flour and dry ingredients together. Beat into other mixture and pour into 15 x 10-inch cookie sheet. Bake at 350° for 15 minutes. When done, turn onto towel sprinkled with powdered sugar. Roll towel and let cool.

Mix filling with mixer. Spread on cake and roll. Refrigerate.
