Pumpkin roll
Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour - 3/4 c
- nutmeg - 1/2 tsp
- powdered sugar
- ginger - 1 tsp
- finely chopped pecans - 1 c
- margarine - 1 Tbsp
- lemon juice - 1 tsp
- softened cream cheese - 8 oz
- cooked pumpkin - 2/3 c
How to make pumpkin roll:
Filling:1 1/4 c. powdered sugar8 oz. softened cream cheese1 Tbsp. margarine1 tsp. vanilla Beat eggs on high speed for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. Fold sifted dry ingredients into pumpkin mixture. Spread into greased and floured 15 x 10-inch jelly roll pan or cookie sheet. Top with pecans. Bake for 15 minutes at 350°. Turn out onto towel that is sprinkled with powdered sugar. Beginning at narrow end, roll cake and towel together. Cool. Unroll.Filling: Mix ingredients; spread over cooled cake. Roll, chill, slice and serve.
