Pumpkin roll



  • eggs, slightly beaten - 3 item
  • sugar - 1 c
  • flour - 3/4 c
  • lemon juice - 1 tsp
  • pkg - 1 oz
  • vanilla - 1 tsp
  • baking soda - 1 tsp
  • pumpkin pie spice - 2 tsp
  • powdered sugar - 1 c
  • canned pumpkin - 2/3 item
  • melted butter - 4 Tbsp

How to make pumpkin roll:

Mix well eggs, sugar, flour, soda and pumpkin pie spice and fold in canned pumpkin and lemon juice. Grease large cookie sheet, then spread mix on it. Bake at 375° for 15 minutes. While still warm, roll like a jelly roll in a damp towel.

Filling: Keep powdered sugar and cream cheese in fridge until ready to use. Melt butter. Add vanilla. Mix until smooth and spread over bread. Roll like a jelly roll.
