  • sugar - 1 c
  • eggs - 3 item
  • vanilla - 1 tsp
  • pkg - 1 oz
  • salt - 1/4 tsp
  • flour - 3/4 c
  • nutmeg - 1/2 c
  • soda - 1 tsp
  • pumpkin - 3/4 c
  • powdered sugar
  • ginger - 1 tsp
  • margarine - 1/4 c
  • nuts optional - 1 c
  • lemon juice - 1 tsp
  • powdered sugar for rolling - 1 item

How to make pumpkin roll:

Filling:1 c. powdered sugar1 (8 oz.) pkg. cream cheese1/4 c. margarine1 tsp. vanilla Beat eggs in high speed for 1 minute; add sugar and lemon juice, beating well. Add soda and salt. Mix spices. Fold flour and pumpkin, beating until well blended. Spread batter on cookie sheet and sprinkle with chopped nuts. Bake at 375° for 20 minutes. Turn cake out on a damp towel sprinkled with powdered sugar. Roll up. When cake has cooled, unroll and spread with filling and roll up again.
