  • sugar - 1 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 3/4 tsp
  • pkg - 1 oz
  • salt - 1/2 tsp
  • flour - 3/4 c
  • butter - 6 Tbsp
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • pumpkin - 2/3 c
  • powdered sugar
  • ginger - 1 tsp
  • lemon juice - 1 tsp

How to make pumpkin roll:

Filling:1 1/3 c. powdered sugar1 (8 oz.) pkg. cream cheese6 Tbsp. butter3/4 tsp. vanilla Roll: Beat eggs on high speed for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. Stir together flour, baking powder, cinnamon, ginger, nutmeg and salt. Fold into pumpkin mixture. Spread in greased and floured 10 x 15-inch jelly roll pan. Top with 1 cup walnuts. Bake at 375° for 15 minutes.

Turn out on towel and sprinkle with powdered sugar. Starting with narrow end, roll up in towel. Cool and unroll filling.

Combine powdered sugar, cream cheese, butter and vanilla. Beat until smooth. Spread over cake. Reroll and chill.
