Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 1 tsp
- butter or margarine - 4 Tbsp
- salt - 1/2 tsp
- flour - 3/4 c
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- powdered sugar - 1 c
- ginger - 1 tsp
- canned pumpkin - 2/3 c
- Add pumpkin, mixing until blended
How to make pumpkin roll:
In a large bowl, combine eggs and sugar, beating well. Add pumpkin, mixing until blended. In a separate bowl, combine flour, baking powder, spices and salt. Add to egg mixture, mixing well. Spread batter into a greased and wax paper lined 10 x 15-inch jelly roll pan. Bake at 375° for 15 minutes. Remove from pan. Cool for 15 minutes. Place cake on clean tea towel. Cool 10 minutes longer. From 10-inch side, roll cake up in towel. Set aside. Meantime, prepare filling.Filling:1 (8 oz.) pkg. cream cheese (soft)4 Tbsp. butter or margarine1 c. powdered sugar1 tsp. vanilla Beat together the cream cheese and butter.
