  • sugar - 1 c
  • cream cheese - 1 (8
  • eggs - 3 item
  • vanilla - 3/4 tsp
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • flour - 3/4 c
  • butter - 2 Tbsp
  • soda - 1 tsp
  • confectioners sugar
  • pumpkin - 2/3 c

How to make pumpkin roll:

Filling:1 c. confectioners sugar1 (8 oz.) cream cheese2 Tbsp. butter3/4 tsp. vanilla Cake: Beat eggs 5 minutes, gradually adding sugar. Stir in pumpkin. Sift flour, soda and salt; add to mixture. Spread in cookie sheet or jelly roll pan with sides, lined with waxed paper (grease both the pan and the waxed paper). Sprinkle nuts on top of cake. Bake at 375° for approximately 15 minutes. Turn out on a confectioners sugar covered towel, nut side down. Roll from short side with towel and cool. Peel off waxed paper.

Filling: Whip together ingredients; spread on top of unrolled cake. Roll back up and refrigerate. This can be frozen.
