  • sugar - 1 c
  • cinnamon - 2 tsp
  • cream cheese - 8 oz
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • salt - 1/2 tsp
  • butter - 1/4 c
  • nutmeg - 1 tsp
  • baking powder - 1 tsp
  • all-purpose flour - 3/4 c
  • powdered sugar
  • ginger - 1 tsp
  • lemon juice - 1 tsp
  • mashed pumpkin - 2/3 c

How to make pumpkin roll:

Filling:1 c. powdered sugar8 oz. cream cheese1/4 c. butter1/2 tsp. vanilla Beat 3 eggs (on high) for 5 minutes. Gradually add 1 cup of sugar, beating well and add pumpkin. Then combine flour, cinnamon, baking powder, salt, ginger and nutmeg. Add to pumpkin mix and blend well. Spoon into greased and floured 15 x 10 x 1-inch pan. Spread into all corners. Bake at 375° for 15 minutes. Turn cake onto towel and sprinkle with 1/4 cup powdered sugar. Roll up in towel. Cool.

Combine powdered sugar, cream cheese (softened), butter (softened) and vanilla. Beat until smooth. Unroll cake. Spread with filling. Re-roll cake and chill side down.
