Ingredients/Components
- eggs - 3 item
- sugar - 1 c
- pumpkin - 2/3 c
- lemon juice - 1 tsp
- flour - 3/4 c
- baking powder - 1 tsp
- nutmeg - 1/2 tsp
- salt - 1/2 tsp
- confectioners sugar
- cream cheese - 3 oz
- butter - 4 Tbsp
- vanilla - 1 tsp
How to make pumpkin roll:
Filling:1 c. confectioners sugar3 oz. cream cheese4 Tbsp. butter1 tsp. vanilla Beat the eggs well and gradually add sugar. Mix pumpkin and lemon juice. Then add dry ingredients. Spread in a greased and floured jelly roll pan. Bake at 375° for 15 minutes. Turn over on a towel and sprinkle confectioners sugar. Starting at narrow side roll cake and towel together. Cool rolled up in the towel. Unroll the towel and spread with cream cheese filling. Reroll cake with filling. Chill. Freezes well.Recipe categories: American, Vegetables, North american.
