Ingredients/Components

  • sugar - 1 c
  • cinnamon
  • cream cheese - 8 oz
  • eggs - 3 item
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • butter - 2 Tbsp
  • nutmeg - 1/2 tsp
  • oil - 3 Tbsp
  • baking soda - 1 tsp
  • powdered sugar
  • plain flour - 3/4 c
  • lemon juice - 1 tsp
  • plain pumpkin - 2/3 c

How to make pumpkin roll:

Filling:1 c. powdered sugar8 oz. cream cheese2 Tbsp. butter1 tsp. vanilla Beat eggs at high speed for 5 minutes, gradually beat in sugar, pumpkin, lemon juice and oil. Mix all dry ingredients together and add slowly to pumpkin mixture. Pour into greased jelly roll pan. Sprinkle nuts on top and bake at 350° for 15 minutes.

Turn out on cloth sprinkled with powdered sugar. Roll up in cloth and let cool. After cooled, unroll and spread with filling and re-roll. This is a good item to freeze.
