Ingredients/Components
- sugar - 1 c
- vanilla - 1 tsp
- pkg - 1 oz
- milk - 4 Tbsp
- salt - 1/4 tsp
- vanilla flavoring - 1 tsp
- eggs, beaten - 3 item
- baking powder - 1/2 tsp
- powdered sugar
- lemon juice - 1 tsp
- pecans, chopped - 1/2 c
- pumpkin, cooked and mashed - 2/3 c
- self-rising flour or plain flour - 3/4 c
How to make pumpkin roll:
Icing:1 c. powdered sugar4 Tbsp. milk1 (8 oz.) pkg. cream cheese1 tsp. vanilla flavoring2 tsp. lemon juice1/2 c. pecans, chopped Beat together the ingredients for cake roll and pour into shallow cookie sheet. Bake at 350° for 15 minutes. Remove and roll in cloth until cool. Unroll; spread with icing on top of roll and slice.
