Pumpkin roll
Ingredients/Components
- sugar - 1 c
- cream cheese
- eggs - 3 item
- vanilla - 1 tsp
- flour - 3/4 c
- baking powder - 1 tsp
- pumpkin - 2/3 c
- nuts - 1 c
- powdered sugar - 1 c
- pumpkin spice - 2 Tbsp
- margarine - 4 oz
- lemon juice - 1 Tbsp
How to make pumpkin roll:
Cream Filling:8 oz. cream cheese1 c. powdered sugar4 oz. margarine1 tsp. vanilla Place in mixing bowl eggs and sugar; beat 5 minutes until thick and foamy. Stir in pumpkin and lemon juice. In small bowl, mix dry ingredients. Add to pumpkin mixture. Sprinkle nuts on top. Grease and flour a cake roll size baking sheet. Spread in mixture. Bake at 375° for 15 to 20 minutes. While still hot, sprinkle on powdered sugar. Roll in cotton towel and let cool.Cream together the filling ingredients. Unroll the pumpkin roll and spread on the filling. Roll up again. Keep refrigerated.
