Pumpkin roll
Ingredients/Components
- eggs - 3 item
- sugar - 1 c
- cooked pumpkin - 2/3 c
- lemon juice - 1 tsp
- baking powder - 2 tsp
- all-purpose flour - 3/4 c
- salt - 1/2 tsp
- nutmeg - 1/2 tsp
- ginger - 1 tsp
- Stir in remaining ingredients
- cream cheese, softened - 1 (8
- butter - 4 Tbsp
- vanilla - 1/2 tsp
How to make pumpkin roll:
Beat eggs at high speed; gradually beat in sugar. Stir in remaining ingredients. Grease cookie sheet. Pour batter on cookie sheet and put chopped pecans on top. Bake for 15 minutes at 375°. Sprinkle a towel that isn't fuzzy (cloth) with powdered sugar and put cake on it. Roll it up and let it cool. Then put filling on the cake and roll it up again in foil.Filling:1 c. powdered sugar1 (8 oz.) cream cheese, softened4 Tbsp. butter1/2 tsp. vanilla Mix all together with fork; spread on roll.Recipe categories: American, Vegetables, North american.
