Pumpkin roll
Ingredients/Components
- sugar - 1 c
- cream cheese - 8 oz
- eggs - 3 item
- vanilla - 1 tsp
- soda - 1 tsp
- confectioners sugar - 1 c
- pumpkin - 2/3 c
- plain flour - 3/4 c
- margarine - 2 Tbsp
- nuts optional - 1 item
- ground cinnamon - 1 Tbsp
How to make pumpkin roll:
Mix first 6 ingredients. Grease a large bread pan (one with a rim). Line pan with wax paper or foil. Grease paper or spray with Pam. Pour batter into pan. (Should be very thin.) Cook 12 to 15 minutes at 375°. DO NOT OVERCOOK. Cool about 5 minutes. Turn cake out onto a clean thin towel and remove foil. Roll cake up in the towel (like a jellyroll). Mix cream cheese, margarine, vanilla and confectioners sugar. Unroll cake and spread with filling, keeping thin near the edges so it doesn't squish out.
