Ingredients/Components
- sugar - 3/4 c
- cinnamon - 1 tsp
- eggs - 2 item
- butter or margarine - 1/2 c
- salt - 1/2 tsp
- flour - 1 c
- butter - 2 Tbsp
- ginger - 1/2 tsp
- pecans - 1/2 c
- brown sugar, firmly packed - 1/2 c
- cloves - 1/2 tsp
- quick cooking oatmeal - 1/2 c
- can milk - 1 1/2
- brown sugar, packed firm - 1/2 c
- can pumpkin 2 c - 1 lb
How to make pumpkin pie squares:
Combine flour, rolled oats, 1/2 cup brown sugar and 1/2 cup butter. Mix until crumbly, press into ungreased 13 x 9 x 2-inch pan. Bake at 350° for 15 minutes.Combine pumpkin, milk, eggs, sugar, salt and spices. Beat well. Pour into crust. Bake at 350° for 30 minutes.
Combine pecans, 1/2 cup brown sugar and 2 tablespoons butter. Sprinkle over pumpkin filling. Return to oven and bake 15 to 20 minutes until filling is set. Cook in pan, then cut into squares. Serve with Cool Whip topping.
