Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 1/2 tsp
- chopped pecans - 1 c
- pkg - 2 oz
- salt - 1/2 tsp
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- ginger - 1 tsp
- plain flour - 3/4 c
- margarine - 4 Tbsp
- lemon juice - 1 tsp
- xxx sugar
How to make pumpkin nut roll:
Filling:1 c. xxx sugar2 (3 oz.) pkg. cream cheese4 Tbsp. margarine1/2 tsp. vanilla Beat eggs at high speed. Gradually add 1 cup sugar and stir in pumpkin and lemon juice. Stir. Sift flour. Stir in baking powder, cinnamon, ginger, nutmeg and salt. Fold into pumpkin mixture. Spread on a greased and floured 15 x 10 x 1-inch pan. Top with chopped pecans. Bake at 375° for 15 minutes. Turn out on towel with xxx sugar on it. Starting at narrow edge, roll towel and cake. Set and cool.Filling: Combine 1 cup xxx sugar, cream cheese, margarine and vanilla until smooth. Spread over cake. Roll jelly roll style. Cool.
