Pumpkin muffins
Ingredients/Components
- sugar - 1/2 c
- cinnamon - 1/2 tsp
- milk - 1/2 c
- salt - 1/2 tsp
- nutmeg - 1/2 tsp
- baking powder - 2 tsp
- egg - 1 item
- sifted flour
- seedless raisins - 1/2 c
- melted shortening - 1/4 c
- mashed cooked or canned pumpkin - 1/2 c
How to make pumpkin muffins:
Preheat oven to 400°. Grease bottom of muffin cups. Beat egg slightly with fork. Stir in milk, pumpkin and shortening. Sift dry ingredients together and stir in just until flour is moistened. Batter should be lumpy. Fold in raisins. Fill greased muffin cups 2/3 full. Sprinkle 1/4 teaspoon sugar over each muffin. Bake 18 to 20 minutes. Serve hot.
