  • sugar - 1 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • salt - 1/2 tsp
  • flour - 2/3 c
  • butter - 4 Tbsp
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • powdered sugar - 1 c
  • ginger - 1 tsp
  • canned pumpkin - 3/4 c
  • lemon juice - 1 tsp
  • walnuts, chopped - 1/2 c
  • Add sugar gradually

How to make pumpkin log:

In a mixer bowl, beat eggs for 5 minutes, until light and creamy. Add sugar gradually. Stir in pumpkin and lemon juice. In another bowl, sift flour, baking powder, cinnamon, ginger, nutmeg and salt. Fold into pumpkin mixture. Spread into jelly roll pan (with waxed paper on) and sprinkle with nuts. Bake in 375° oven for 15 minutes. Immediately turn out onto linen towel dusted with powdered sugar. Roll cake with the towel and place on wire rack to cool. After completely cool, spread with filling. Roll it again. Wrap in waxed paper and chill.Filling:1 (8 oz.) pkg. soft cream cheese4 Tbsp. butter1 c. powdered sugar1/2 tsp. vanilla Combine all ingredients together in a small mixer bowl and beat well with mixer on low speed until blended. Continue beating until creamy.
