Pumpkin cheesecake bars
Ingredients/Components
- butter, softened - 5 Tbsp
- sugar - 3/4 c
- cinnamon - 1/2 tsp
- vanilla - 1 tsp
- flour - 1 c
- eggs, lightly beaten - 2 item
- allspice - 1 tsp
- softened cream cheese - 8 oz
- packed golden brown sugar - 1/3 c
- finely chopped pecans or walnuts - 1/2 c
How to make pumpkin cheesecake bars:
Combine flour and brown sugar in bowl. Cut in butter to make crumb mixture. Stir in nuts. Set aside 3/4 cup crumb mixture for topping. Press remaining mixture in 8 x 8-inch pan and bake at 350° for 15 minutes. Cool slightly.Combine rest of ingredients in mixing bowl and blend until smooth. Pour over baked crust. Sprinkle with reserved topping and bake an additional 30 to 35 minutes. Cool. Cut into 32 (1 x 2-inch) bars.
