Ingredients/Components

  • sugar - 1 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • melted butter - 4 Tbsp
  • powdered sugar
  • ginger - 1 tsp
  • lemon juice - 1 tsp
  • flour plain - 3/4 c
  • sprinkle of salt - 1 item
  • cooked pumpkin - 2/3 c
  • large cream cheese - 1 item

How to make pumpkin cake roll:

Filling:1 c. powdered sugar1 large cream cheese4 Tbsp. melted butter1/2 tsp. vanilla Sift together flour and spices. Mix the rest of ingredients. Pour into well-greased cookie sheet. Bake at 375° for 15 minutes. Turn over on small towel covered with confectioners sugar. Roll up and let cool.

Mix all ingredients for filling. Unroll cake carefully. Spread filling on cake and roll up again, pulling towel away from cake carefully. May need a little chilling before slicing and serving.
