  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • granulated sugar - 1 c
  • pkg - 2 oz
  • salt - 1/2 tsp
  • flour - 3/4 c
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • pumpkin - 2/3 c
  • powdered sugar - 1 c
  • ginger - 1 tsp
  • lemon juice - 1 tsp
  • butter soft - 4 Tbsp
  • Stir in pumpkin and lemon juice

How to make pumpkin cake roll:

Beat 3 eggs on high speed of mixer for 5 minutes; gradually beat in the sugar. Stir in pumpkin and lemon juice. Stir together flour, baking powder, cinnamon, ginger, nutmeg and salt. Fold into pumpkin mixture. Spread in a greased and floured 15 x 10 x 1-inch pan. Top with nuts and bake.Frosting and Filling:1 c. pecans1 c. powdered sugar1/2 tsp. vanilla2 (3 oz.) pkg. cream cheese4 Tbsp. butter (soft) Combine all ingredients and beat smooth. Turn out cake on wax paper sprinkled with powdered sugar. Spread filling on top. Start at narrow end and roll cake together. Cool.
