  • salt - 1/2 tsp
  • flour - 3/4 c
  • butter - 4 Tbsp
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • powdered sugar
  • ginger - 1 tsp
  • chopped walnuts - 1 c
  • lemon juice - 1 tsp
  • solid pack pumpkin - 2/3 c

How to make pumpkin cake roll:

Filling:1 c. powdered sugar2 (3 oz.) cream cheese4 Tbsp. butter1/2 tsp. vanilla Mix first 6 dry ingredients. Beat eggs, sugar, pumpkin and lemon juice. Mix well with dry ingredients. Spread in greased and floured 15 x 10 x 1-inch pan. Top with nuts. Bake at 375° for 15 minutes. Turn out cake onto powdered sugar dish towel (hot). Roll up cake with towel and let cool.

Filling: Mix sugar, cheese, butter and vanilla. Unroll cake; spread filling on cake. Roll up again and chill.
